Awesome! Thanks Kim, good to know. I wasn't sure about the way I measured either. I measured out the whole almond first then ground it in the FP. Its likely I didn't have an accurate measurement. They were good but some people may not like the texture. I'm going to try making with my almond flour next. Happy Holidays and thanks for answering my question.

Did you use 1 1/2cups of almond flour? I had almond flour in my frig as well as whole almonds. I chose to zzzzzz them in the food processor. Made a double batch so I can give them to "friends." Also, if you can use the freezer as a chilling option it works so much better than the frig, plus its quicker. BTW beautiful photo tutorial!! You are a whiz with the photos.

@chocolatechic - i know, i'm totally making a double batch next time!!
@engineer baker - i think i got that many b/c they just got thinner as i went along, hehe.
@CB - yep, that book is definitely worth a read! it has a lot of photo tips and also goes into food styling techniques (some of which are cheesy, but some good). i use a tripod for all my pics. i need a long exposure time b/c it's so dark in my cave.
