Corned Beef

North Carolina trip continued...

My mom had the brilliant idea to make a corned beef for Easter dinner. And when I say "make", I mean that she started from a flank steak over a week before. It was excellent (even if she used Coors Light instead of Guinness ;) )



It was quite an undertaking, and the entire house smelled like corned beef for hours. And of course, she served it with the obligatory cabbage. I think it was a pretty perfect meal, given how close Easter was to St. Patty's Day this year.


Quite a time-consuming meal, but worth it! In case anyone is interested, here is Alton Brown's recipe.

Well, that's it for my trip to N.C. It was great to get away from the city... can't wait to go back and do it again!

Whiskey Sours

North Carolina trip continued...

My family has a secret recipe for whiskey sours. Well, that's what we call them, but I'm not sure most mixologists would agree after taking a look at them...



Well, whatever they are, they're absolutely delicious! Always a hit at a party, and a de facto part of any family get-together :)

Festival Eats

Post #2 from my North Carolina trip is more from the Southport Spring Festival... this time with real food ;)

First, the quintessential festival food-on-a-stick... the corn dog!



Of course, a festival wouldn't be complete without some potato and corn chips...

Fake it

So, I'm dedicating all of my posts this week to showcasing my recent trip to North Carolina! I encountered lots of good eats down South. The first day I was down there, we went to the Southport Spring Festival, where there was a ton of good food.

And fake food.



OK, so this one is technically NOT FOOD. It is made of candle wax. Looks pretty good to me, though. I was very close to diving in when I spotted the wicks in there.

Some things got to change around here....

So, SOMEONE no longer fits into her wedding dress, so SOMEONE is going to take a little hiatus from all of the cupcake baking. (Sorry, coworkers.)

Chai + White Chocolate

After yesterday's frosting fiaster, I decided to try out swiss meringue buttercream one more time. I must say that it turned out about 1000 times better, texture-wise, anyway... nice and light and silky :) The Dyann Bakes video for this frosting helped me out tremendously.



I decided to make a chai flavored cupcake (recipe here) with white chocolate frosting. I had a hard time finding the white chocolate SM buttercream recipe, but eventually found a great one (at the bottom of the linked page) from Mr. Weddingcakes.com, Ron Ben-Israel.




My local grocery store didn't have any non-coconut-flavored white chocolate bars, so I decided to get Lindt white chocolate truffles instead to flavor the icing. Turned out pretty well, and I used the leftovers to drizzle on top of the cupcakes... mmm.



I haven't actually tried these yet, but if the smell was any indication, they were great! A.'s coworkers are probably feasting on them as I type this, or will be soon :)

St. Patty's Day...

Even though *technically* St. Patrick's day was on Saturday, personally I'm observing it today :) I made these cupcakes last night to try to be festive, chocolate cupcakes with peppermint frosting and ganache filling:

They came out OK, but definitely on the dry side. Not sure what I did wrong. I also used a different frosting, from here... while it was tasty, it unfortunately was short in the volume department for the other recipe, so I had to skimp a little bit on each cupcake.



I also used the opportunity to try out my new mini cupcake pan... they were pretty cute, but I think I overfilled the cups because they ended up looking like popovers;)

Ate at one of my favorite pizza places, Adrienne's, last night. The contents of the doggy bag...




We opted for sausage and broccoli, which turned out to be a great combo.



I love the Adrienne's crust, it's crispy on the outside with just a touch of chewiness inside... delicious!

Roy's Molten Lava & Choice Eats

So, a while back I promised a photo of the chocolate souffle from my birthday dinner at Roy's... and I am finally making good on that promise! You might want to sit down for this full-on chocolatiness:

In non-photo news, I went to the Choice Eats tasting last night sponsored by the Village Voice. In short, it was spectacular. Delicious food, drinks included in the $25 ticket price... it was a really well-executed event which left me regretting that I hadn't worn elastic-waist pants. I also spent the night wishing I had my camera, but I would have had to grow a second pair of hands to use it because I was too busy stuffing my face!

Salad dog

This is crazy, people. I don't think I've ever seen a hot dog this healthy before. Look at all of that color and the abundance of vitamins:

I thought I'd already seen the craziest way to eat a hot dog (credit to my mother, who cuts it up into little pieces and puts a dab of ketchup, mustard and relish on each piece), but I think this just might win out.

Cheery cupcakes

I've been in a bad mood all week, so I decided to make these cupcakes to cheer me up a bit. They turned out to be very tasty and definitely made a dent in the gloom :) (My frosting skills haven't gotten any better after the acquisition of the Wilton 53-piece decorating kit... it looks so eeeeasy in the book...)

I got the recipe here: Blueberry and Raspberry Ricotta Almond with Cream Cheese frosting. There are so many creative recipes on that blog, I love it! I'm also jealous of the lightyears-better decorating prowess over there ;)

Belated Fry-Day

I meant to post this on Friday, but I was deluged with a storm of work and had seven of eight bosses breathing down my neck. (The other one was out of the office.) Anyway, you'll be happy to know that I did, in fact, celebrate Fry-Day with a dinner of fried pizza and this classic and delicious combination:
