Tuesdays with Dorie: Pumpkin Muffins

I love fall! I love the warm colors, the nip in the air, and most of all, pumpkin! I have been fantasizing this year about going pumpkin picking and carving my own pumpkin, but I haven't had the time — fall is also rugby season, so most of my free time is spent rucking and scrumming. My rugby team just won our regional championship, so we're heading to our national tournament in Orlando, FL in a few weeks! Anyway... (sorry... I'm still excited about it!) I was lucky to get a chance to make these muffins for TWD, chosen by Kelly of Sounding my Barbaric Gulp.

I decided to stick with Dorie's suggestion for once and use the raisins. However... I did flame them in some rum beforehand ;) They were nice and moist, and I do like the golden raisins better than regular raisins. I omitted the nuts and seeds... things were getting a little too healthy for comfort ;)

I decided to halve the recipe and make mini-muffins, so I ended up with 24 minis, plus extra batter for 4 more kinda medium-sized muffins. If I make them again, though, I would try to fit all of the batter in the mini muffin tin, since I think they should be a little bigger than this (the muffin top was sorely lacking here).

The end result was pretty good. I won't say spectacular, because I thought they were a little dry, but I did enjoy the flavor. I think next time I'll try to use oil instead of the butter to see how that turns out.

Another thing I loved about this recipe: giving me an excuse to buy a mini-pumpkin for a prop ;)

Okay, I was trying very nicely NOT to add any additional butter melting gently into the heat of the muffin...trying and succeeding until I saw your photo. All was lost...your photography is downright crime-inducing!

Oooh -- your butter picture! Honestly, I still dream about these muffins with butter melting on top; they are SO GOOD that way! I think I'm going to follow your lread and do minis next time. Yours look beautiful!

My full sized muffins weren't dry at all but they were cakey. I think a pat of butter makes any bread product better! Your photos really say "autumn" - love the mini pumpkin and the yellow muffin paper.

Oh the mini pumpkin looks so cute! Mine were lacking in muffin tops as well. Your first picture looks so good I think I'm going to have to go spread some butter on one right now...

You could also try substituting sour cream for buttermilk. I had to because the store was out of it and they came out very moist and dense.

Fabulous photographs! I'll take the muffin with the slab of butter, please. I do like golden raisins for some reason, especially in bread, and I really debated whether to use them for the muffins, but went for currants instead.

youre pictures have truly captured the ingredients and are so visually stimulating...absolutely wonderful. I must agree with the fall colors making one happy. I can't seem to get enough. I love the butter pic and I (typically) don't want butter on my food. You have done a great job
