Corned Beef

North Carolina trip continued...

My mom had the brilliant idea to make a corned beef for Easter dinner. And when I say "make", I mean that she started from a flank steak over a week before. It was excellent (even if she used Coors Light instead of Guinness ;) )

It was quite an undertaking, and the entire house smelled like corned beef for hours. And of course, she served it with the obligatory cabbage. I think it was a pretty perfect meal, given how close Easter was to St. Patty's Day this year.

Quite a time-consuming meal, but worth it! In case anyone is interested, here is Alton Brown's recipe.

Well, that's it for my trip to N.C. It was great to get away from the city... can't wait to go back and do it again!
