Red Velvet

I attempted red velvet cupcakes last night, using a recipe from Paula Deen. As you can see, the cakes themselves ended up more like muffins, but that doesn't really surprise me since I was employing the Muffin Method in the recipe (thanks for breaking that down, Alton). This recipe isn't very chocolatey, so the red part is mainly from lots of food coloring, but it's still pretty tasty.





I also attempted to pipe the icing prettily with the "swirls technique"... worked OK, but the icing was too soft since I wasn't patient enough to wait for it to harden in the fridge (plus, I kept eating it :) )

I think next time I'll try a more cakey recipe... but I'll definitely still use that same icing!! (I heart cream cheese.)
